This butterbeer cake is a simple from scratch cake that you can easily make. Its perfect for those who love to bake but aren’t necessarily wanting a super fancy finicky cake. The best part is that the decorations are up to you and SIMPLE!

How to make this homemade cake recipe:

This cake is an easy homemade cake recipe. For the full set of directions, please make sure to scroll down to the recipe card below.

Make your cake:

  1. Preheat oven to 350 degrees and grease and flour two 8″ pans.
  2. In a medium bowl, whisk together the flour, baking soda, and baking powder.
  3. In a large bowl, cream together the butter and sugars, about 3-5 minutes, until pale and fluffy.
  4. Add in the eggs, vanilla, milk, butterscotch topping, and cream soda and mix until well combined.
  5. Add in half of the dry ingredients, beating until smooth.
  6. Then add in the rest of the dry ingredients, again beating until smooth.
  7. Pour the cake batter into the prepared pans evenly.
  8. Bake the cakes for 30-35 minutes or until a knife inserted in the center comes out clean.
  9. Cool completely before frosting.

Make the butterbeer buttercream frosting:

  1. To make the frosting, beat together the butter, butterscotch, and cream soda.
  2. Add in the sugar and beat until smooth, about 10 minutes.
  3. Decorate the cooled cake as desired.
  4. Drizzle with extra butterscotch topping!

What is the best way to store this cake?

This cake is best stored covered in plastic wrap in the fridge for up to 5 days. Serve at room temperature for best flavor.

The cooled cake layers can be baked ahead of time, wrapped in two layers of plastic wraps and stored in the fridge for 1 week. The frosting can be placed in an airtight container in the fridge and will keep for 1 week.

Can I turn this cake into cupcakes?

Yes! To turn these into cupcakes, simply evenly divide the batter amongst the cupcake pans. You will need to adjust the timing of the baking. Bake these for approximately 18-20 minutes, checking with a toothpick inserted into the center to make sure they are done.

Ingredients

Cake:

  • 2 cups flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 stick unsalted butter softened
  • ½ cup sugar
  • ½ cup brown sugar packed
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 2 Tbsp butterscotch topping
  • ½ cup cream soda

Frosting:

  • 1 stick unsalted butter softened
  • cup butterscotch topping
  • 1 Tbsp cream soda
  • 1 lb powdered sugar
  • Extra butterscotch topping for decorating

Instructions

  • Preheat oven to 350 degrees
  • Grease and flour two 8″ pans.
  • In a medium bowl, whisk together the flour, baking soda, and baking powder.
  • In a large bowl, cream together the butter and sugars.
  • Add in the eggs, vanilla, milk, butterscotch topping, and cream soda.
  • Add the dry ingredients half at a time, beating until smooth.
  • Pour into the prepared pans.
  • Bake 30-35 minutes or until a knife inserted in the center comes out clean.
  • Cool completely before frosting.
  • To make the frosting, beat together the butter, butterscotch, and cream soda.
  • Add in the sugar and beat until smooth.
  • Decorate the cake as desired.
  • Drizzle with extra butterscotch topping!

  1. I'm so glad that you all enjoyed the cake!! And don't worry, I probably would have done the same thing with the frosting – I think I mentioned that I made 6" cakes, so if you made 8" ones, you may have needed a little more (maybe 1 1/2 times the recipe). I'll make sure to make that more clear in my recipe. Still, I'm glad it turned out! 🙂
