Winner, Winner, chicken dinner! This easy chicken cordon bleu recipe is easy to make, which makes it perfect for a busy weeknight meal. This chicken is rolled with prosciutto, mozzarella cheese, and seasoned breadcrumbs, which means its definitely not “another boring chicken recipe!”

How to make chicken cordon bleu

This is a simple and easy version of the classic chicken cordon bleu, which makes it perfect for a weeknight! For the full set of directions, make sure you scroll down to the recipe card below:

  1. Preheat oven to 350F. Spray a baking dish with cooking spray.
  2. In a small microwave bowl, heat the broth for 15 seconds in the microwave and stir the butter and garlic into the warmed broth.
  3. In a medium bowl, combine the breadcrumbs, parmesan and paprika.
  4. Place each chicken breast between 2 sheets of heavy duty plastic wrap and pound each to a 1/4″ thickness using a meat mallet or a rolling pin.
  5. Season both sides of the chicken.
  6. Top each piece of chicken with 1 slice of prosciutto and 1 Tablespoon of mozzarella.
  7. Roll up each piece of chicken jelly roll fashion (I found it helpful to secure it with a toothpick).
  8. Dip each rolled chicken into the broth mixture and then dredge in the breadcrumbs.
  9. Place rolls, seam side down onto the prepared baking dish.
  10. Pour the remaining broth mixture over the chicken.
  11. Bake for 28 minutes or until the juices run clear and the tops are golden.
  12. Enjoy!

Ingredients

  • ¼ cup fat free reduced sodium chicken broth
  • 5 TBSP butter melted
  • 1 large garlic clove minced
  • ½ cup dry breadcrumbs
  • 1 TBSP parmesan cheese
  • 1 tsp paprika
  • 4 6-ounce skinless, boneless chicken breasts
  • ¼ tsp salt
  • ¼ tsp dried oregano
  • ¼ tsp pepper
  • 4 slices prosciutto about 2 ounces
  • ¼ cup shredded mozzarella cheese
  • cooking spray

Instructions

  • Preheat oven to 350F.
  • In a small microwave bowl, heat the broth for 15 seconds in the microwave.

  • Dip each rolled chicken into the broth mixture and then dredge in the breadcrumbs.

  1. This is one of my favorite chicken dishes EVER. I had it for the first time with my paternal grandparents at a French restaurant on Colombus ave that's no longer there, but oh..the memories. I always begged to go there for the chicken cordon blue, thereafter! Yours looks just as good as the one I remember, which is great since I haven't had any like it since. Of course I'm going to pin this LOL
