Pumpkin Spice Pancake Recipe

This pumpkin spice pancakes recipe starts with a buckwheat pancake mix, to which pureed pumpkin and spices are added. Topped with a special homemade syrup topping, these are fantastically fall!

These pancakes are an easy and delicious fall breakfast! I mean, really, really easy!

 
They are in fact VERY good! I like the combination of the pumpkin with the buckwheat pancake mix and the spices.

How to make these pancakes:

These pancakes are super simple to make. For the full set of directions, make sure you scroll down to the recipe card below. Here is a brief overview:

  1. Warm a large non stick skillet over medium-low heat.
  2. In a medium bowl, whisk together the pancake mix, pumpkin puree, juice, egg, and pumpkin pie spice (affiliate link).
  3. In a separate medium bowl, whisk together the apple butter, yogurt, and syrup. Set aside while you cook the pancakes.
  4. Spray the skillet with cooking spray and ladle about 1/4 cup of batter onto the grill.
  5. Cook until bubbles form int he batter and the underside is golden.
  6. Flip the pancake and cook until golden on both sides.
  7. Repeat with remaining batter.
  8. Serve with the yogurt syrup topping and fresh blueberries.

Recipe Note: You CAN make these with a regular pancake mix instead of a buckwheat pancake blend. But I highly encourage you to find a buckwheat pancake blend (I really like the Bob’s Red Mill Buckwheat Pancake Blend – affiliate link). The earthiness of the buckwheat really adds to the flavor of this recipe.

Ingredients

Pancakes

  • ¾ cup dry buckwheat pancake mix
  • ½ cup canned pureed pumpkin
  • ¾ cup unsweetened apple juice
  • 1 tsp pumpkin pie spice
  • 1 egg

Topping:

  • ½ cup low-fat vanilla yogurt
  • 2 TBSP maple syrup the real stuff
  • cup apple or pumpkin butter
  • ¼ cup fresh blueberries

Instructions

  • In a medium bowl, whisk together the pancake mix, pumpkin, juice, egg, and the spice.
  • In a separate bowl, whisk together the apple butter, yogurt, and syrup; set aside.
  • Warm a large non-stick skillet over medium-low heat.
  • Spray the skillet with cooking spray and ladle about 2 TBSP of batter onto the grill.
  • Cook until bubbles form in the batter and the underside is golden,  and then flip.
  • Cook until both sides are golden brown.
  • Repeat with remaining batter.
  • Serve with the topping and blueberries. Enjoy!
